A Little Batchelor Cooking In The Night... Well, how to eat well... and do it quickly and on a budget. Here is one sample of how I have either steak, chicken or pork for lunch. Basically I make a kibob by pre slicing the meat and veggies and adding seasoning before freezing the individually wrapped bundles. Take one to work and leave it in the your cooler or in the fridge. Cook in a microwave on high for about four minutes in a bowl covered with a plate and you have a hot tasty meal that is made from products not intended to have a 23 year shelf life. First, start with small whole potatoes,( before taking the items ( Oh, and if you are concerned about the rumors about plasticizers being released from plastic while microwaving, as of yet, my research is showing it is an unsupported claim. )... Slice a larger piece of meat into thin slices (about 1/4") (
)... then slice open a pepper and scoop out the seeds (
)and wash some small sweet onions (
) although sometimes these onions taste bitter. Perhaps another onion can be substituted or even some peppers form a mixed/stir fry mix... and then, wash and cut asparagus (this lies along side the skewered product and gets wrapped side by side (
). At this point, take some skewer sticks (
) and soak them in a glass of water (a suggestion from my girlfriend who is afraid the sticks will catch fire) (
)
) and skewering. Then wrap with Cling Wrap (
) and drop individually into a self seal baggy... (you might want to nip off the tip of the stick to keep your juices seales in. Then add seasoning (
). What I do here is take some Newman's Own, add some minced garlic (1 tsp) some horse radish (1 tsp) as well as some mustard, Goya and a few shakes of vinegar from the old Jalapeno bottle (). Wrap n Rack: (
)Rack the items in the freezer until you need to take a lunch to work. REMEMBER; All microwaves vary, so you may need to cook between 3 and 6 minutes depending on the ability of the unit on the full power setting. The sealing and the salad dressing will keep it from burning. Enjoy!
